I have only made 2 recipes from this book so far but they have been perfection! I made the Asparagus and Leek Soup (which was so good I was giggling) and the soup from the cover – the Cranberry and Wild Rice Soup. Both were filling, smooth, and creamy. The Asparagus and Leek Soup is perfect for a Thanksgiving starter dish and I can’t wait to serve it to my family. The recipes are very creative and even when a recipe seems rich, when you look at calories per serving, they are actually quite low. I also like the tips for how to alter recipes for vegans and such should I ever need to do that.
So far, I’ve made the curried carrot soup with the cilantro pistachio cream, and the cream of tomato soup, and I have vegetables in the oven right now for roasted butternut squash soup. My kitchen smells so good right now! These recipes are easy to put together, taste great, and are visually appealing. I like that Paulette Mitchell offers vegan options with each recipe. I’m not a vegan, but I appreciate that consideration was given to the vegans who might buy this cookbook. I’m looking forward to cooking through this beautiful and useful book.
I really love this book. I like to have a soup going just about everyday and this book has so many different kinds. It’s my go-to book for soup. The recipes may seem like they call for a lot of ingredients, but don’t be overwhelmed by that. Just find the few soups that you want to make over and over again and stock up on those spices and herbs. I’m fortunate to have a store nearby that sells in bulk, so I can buy small or large quantities versus having to buy a whole bottle. And sometimes I don’t use a spice in the ingredients. For tonight’s soup, I did not spend $9.00 on the little bottle of saffron threads. I’m sure it will slightly change the flavor of my soup but so what? I’m picky about what I’m willing to spend money on. I have found all of the instructions correct and easy to follow. I would highly recommend this book, especially if you’re like me and pretty much need a recipe for anything.
