This book is so unique. I love the fact that many of the baked goods require minimal flour-combining. Flour blends are nice, but they make me worry about having all three, four or five at hand, just to make a cupcake. It’s good to know i can get by with one or two max. The baked goods are wholesome and a little heavier than other GF recipes I’ve tried. I prefer this, especially in muffins and waffles. No xanthan gums or weird egg-butter-dairy replacers. Just basic ingredients, which probably makes the baked goods a little heavier. So glad to find a book without the customary rice flour in every single thing. Thanks for this unique book with a twist on GF cooking as well as the interesting healing arts section. Wish that was in the front. I almost missed it.
