Enjoy this recipe from Mom’s Very Best Recipes.Mushroom-Barley Beef Soup 1/2 lb. stew beef, cubed 1 onion, chopped 2- 8-oz. pkgs. sliced mushrooms 1 T. olive oil 4 14-1/2 oz. cans beef broth 3/4 c. quick-cooking pearled barley, uncooked Combine beef, onion, mushrooms and oil in a large saucepan. Cook over medium-high heat for about 10 minutes, until beef is browned. Stir in broth; bring to a boil. Add barley. Reduce heat and simmer, covered, for 30 to 45 minutes, until beef and barley are tender. Makes 4 to 6 servings.

I have this cookbook on my Kindle. It is so handy to have a recipe book at my fingertips when we are traveling and I need a quick recipe to make while I’m visiting family. I can always find something from this book to put together no matter what the mealtime! Of course, I love all of the Gooseberry Patch Cookbooks! They are fun just to “read” !!!
