This book is appropriate for those on a diabetes friendly plan, but it is also a blueprint for those who may want to incorporate healthier meals without comprising flavor. Some of the recipes in the book have become part of my rotating repertoire. The one recipe I make over and over again is the chicken and rice soup. It is savory, flavorful, and satisfying–just what you need when you are feeling under the weather. Tacos are one of my favorite things to make, and this book has a whole chapter dedicated just to tacos! I often make the shrimp tacos, and the blacked fish tacos with pineapple salsa.
